Easy gourmet recipe for beef tenderloin stuffed with bacon and goat cheese and rolled in pesto.
1 beef tenderloin (3 lbs), trimmmed
8 oz of goat cheese
6 pieces of bacon, cooked and crumbled
2 cups of basil
3 cloves of garlic
1 tablespoon pine nuts
1/4 cup extra virgin olive oil
1/3 teaspoon kosher salt
1/4 teaspoon ground black pepper

Cooking Beef Tenderloin
on the Grill
Lengthwise, cut halfway through the tenderloin (see video for clarification).
Stuff beef tenderloin with the goat cheese and crumbled pieces of cooked bacon.
Use butcher twine to tie tenderloin together every two inches.
Finely chop the basil, garlic, and pine nuts in a food processor. Add the olive oil, salt, and pepper and pulse everything into a pesto paste.
Rub pesto all over the outside of the stuffed beef tenderloin. Wrap in plastic and set-aside for ten minutes.
Preheat grill and cook beef tenderloin on the grill per the instructions on this page.
