The coals should be white hot. Place a cast iron griddle flat top or skillet over the coals and allow it to preheat for 20 minutes. Meanwhile, in small bowl mix together all of the ingredients except the catfish fillets to create a homemade cajun seasoning for blackening your catfish during grilling. Brush both sides of each fillet with your homemade cajun seasoning. Clean and lightly oil grill grate. Place the catfish with the rounded side down first onto your preheated griddle or skillet.
