Ingredients (Serves 4)

1/2 cup butter, softened
2 tablespoons lemon juice
1 1/2 teaspoons dried minced onion
2 garlic cloves, minced
1 1/2 teaspoons dried parsley flakes
3/4 teaspoon dill weed
1/4 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
4 halibut steaks, 1-inch thick
Directions for Barbecued Blackened Halibut
Preheat grill for medium heat (350 degrees F).
In a medium bowl, whisk together the first nine ingredients.
Lightly oil grill grate. Brush one side of halibut steaks with lemon herb butter and lay them seasoned side down. Grill 5 minutes then brush remaining side with more
of the seasoned butter. Flip once and continue grilling for 5 minutes or until fish flakes easily with a fork and a nice blackened crust has formed on your halibut
steaks.
