Ingredients (Serves 4)

1/2 cup grated Parmesan cheese
1/4 cup butter, melted
3 tablespoons italian dressing
3 tablespoons chopped green onions
2 pounds orange roughy fillets
2 tablespoons lemon juice
1 1/2 teaspoons garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
Directions for Cooking Orange Roughy on the Grill
Preheat grill for medium-high heat (400 degrees F).
Lay out a heavy duty piece of foil. Crimp edges (leave flat).
In a small bowl whisk together the parmesan cheese, melted butter, italian dressing, green onions. Set-aside.
Place orange roughy fish fillets on the foil. Rub each side with lemon juice, garlic powder, salt and pepper.
Lightly oil grate. Place foil with fish flat on the grill. Cover and grill orange roughy for 3 - 4 minutes.
Brush fish fillets with the parmesan mixture and sprinkle tops with desired amount of bread crumbs.
Cover and continue grilling orange roughy fillets 3 - 4 more minutes or until fish flakes easily with a fork and the crumbs have begun to brown.
