Meanwhile, in a small bowl whisk together the melted butter, pepper, minced garlic, and 1/4 cup of the lime juice. Brush the flesh side of your red snapper fish fillets with garlic and lime butter mixture. Reserve leftover marinade to be used during grilling. In another bowl, whisk together the remaining 1/4 cup of lime juice, sour cream, mayonnaise, and hot pepper sauce. Refrigerate while grilling your fish. Place each fish fillet skin side down onto the grate. Cover and grill for 20 - 25 minutes, occasionally brushing with remaining garlic and lime butter marinade. Do not flip. The red snapper is done when the it flakes easily with a fork and can be removed fairly easily from the grill. In each tortilla, place a dollop of the chilled spicy sour cream sauce and top with flaked grilled red snapper, shredded cabbage, cilantro, and red onion. Fold over and serve.
