Time: 30 Minutes

  • 1 pound fresh mushrooms, stems removed

  • 3 medium onions, cut into 1/2 inch thick slices

  • 1/3 cup Italian dressing

  • 8 ounces crumbled blue cheese
  • Directions for Grilling Stuffed Mushrooms

    Preheat grill for high heat (at least 500 degrees F). Your grill is ready when you can only place the palm of your hand two inches above the grate for 1 - 2 seconds before pulling away.

    Meanwhile, put mushrooms, onion slices, and Italian dressing into a large, resealable plastic bag. Seal and turn to coat. Open, remove excess air, reseal and allow to marinate just 10 minutes at room temperature.

    Grilling Tip:
    Mushrooms are like sponges. So less is more when it comes to marinating them. This avoids the flavors from becoming too overpowering and creating sour, slimy mushrooms.

    Remove mushroom caps and stuff with crumbled blue cheese.

    Lightly oil grate and place onion slices and mushrooms (cap side down or you will lose your cheese) onto it. Grill stuffed mushrooms about 5 minutes or until tender and blue cheese has melted.

    Turn onions frequently and grill until they are tender with some charring (6 - 8 minutes).

    To serve, loosely chop grilled onions and top with stuffed mushrooms, cap side down (so blue cheese is exposed).
