Important Grilling Tips for Marinated Grilled Vegetables

Many of our marinated grilled vegetable recipes call for balsamic vinegar. Go for the good stuff (over $5). Cheaper versions tend to be sour and overpowering, while quality balsamic vinegar is sweeter and you won't need as much which will make up for the added price.

Blend don't whisk. Blending rather than whisking your marinade for grilled vegetables prevents one single flavor from dominating the marinade (usually olive oil). Just throw all the vegetable marinade ingredients into a small blender or food processor and pulse for at least 10 seconds to thoroughly combine all the flavors.

There are some exceptions to this rule like when your grilled vegetable marinade is less than a 1/4 cup. It is such a small amount it isn't worth the "dishes". Or if the marinade contains honey which can make it difficult to pour. In this case, add all the marinade ingredients to your marinating bag and squish to mix everything together.

Each of our recipes for marinated grilled vegetables assumes you are going to follow our instructions above and then do the following:

Pour marinade and vegetables into a large resealable plastic bag. Seal and turn to coat everything. Open, squeeze out excess air, reseal and refrigerate at least 30 minutes to capture some of the flavor (the longer the better). We don't recommend marinating vegetables longer than 4 hours because the flavor can overwhelm the vegetable itself, and in the case of mushrooms - too much marinating turns them slimy and sour.
