Grilling whole chicken is easy and delicious when you use our slow cooked grilled whole chicken recipe. We also have a how to grill whole chicken video at the bottom of this page.

Slow Cooked Grilled Whole Chicken Recipe

Ingredients (Serves 8)
Time: 1 1/2 Hours

  • 1 (4 pound) whole chicken


  • 3 tablespoons butter


  • 1 tablespoon lemon pepper


  • 2 teaspoons dried parsley


  • 2 teaspoons oregano


  • 2 teaspoons basil


  • 1 teaspoon dried rosemary, crushed


  • 1 cup apple juice

    Preheat an outdoor grill for low heat (225 - 250 degrees F) if you're using a gas grill. If you're using charcoal, spread the briquettes out in an even layer. The charcoal is ready when you can hold the palm of your hand two inches above the grate for at least 7 seconds before pulling away.

    Rinse chicken inside and out. Pat dry and tie the legs with twine (see video) to prevent them from overcooking. Fold the wing tips behind the chicken's back.

    In a small bowl mix together the lemon pepper, parsley, oregano, basil, and rosemary. Loosen the skin around the breast area and rub half of the spice mixture under the skin. Also, place each tablespoon of butter in various spots under the skin. Rub remaining spices outside the whole chicken (remember the legs).

    Add a cup of apple juice to a grill safe pan and place it on lower grate directly under the chicken (this will provide moisture and added seasoning).

    Grill whole chicken, breast side-up on the top grate. Cover grill.

    This slow cook method for grilling whole chicken takes 4 - 5 hours.

    Partially close the lower air vents to control the burn rate of the charcoal. Add briquettes as necessary to maintain the right temperature (225 - 250 degrees F).

    You can check the temperature while grilling your whole chicken by sticking an instant read thermometer through the vent at the top of your charcoal barbecue grill.

    Grilling Tip:
    The top vent of your grill should always stay open when you are slow cooking any meat because it will allow the smoke to circulate and prevent oversmoking your meat which can leave a bitter taste.

    Grilling Tip:
    To add flavor while your grilling your whole chicken you can wrap some smoker wood chips in aluminum foil and place them directly on the coals.

    Your grilled whole chicken is done when a meat thermometer reads 170 degrees F when inserted into the thickest part of the thigh (not touching the bone). Let it rest 10 minutes before serving.

    Do you want to speed the time up for grilling whole chicken? Just adjust the temperature for medium (350 degrees F) indirect heat. Do this and you can slow cook your whole chicken on the grill in 1 1/4 - 1 1/2 hours.

    Grilling Whole Chicken Cancelled Due to Weather?
    Oven baked whole chicken is easy. Just put it in a 13 x 9 baking dish and bake at 350 degrees F for 1 1/2 hours. Don't forget to put a pan of apple juice in the oven with it because the secret to the awesome flavor of this recipe is the liquid.
